Pickled Beet Salad with Goat Cheese Cream, Mizuna and Pistachios
Our concerns with this dish echo what some other Disney World Food Bloggers have said…
All of the goat cheese cream was at the bottom and was pretty inaccessible. Puzzling because the white creaminess would have bee visually pleasing on TOP of the salad and it would have provided a better opportunity for incorporating it in the dish.
The pistachios were plentiful and provided some crunch.
Don’t be deceived by the beets though, they also provided quite a bit of crunch. I’ve been seeing recipes on the internet for beet salad that don’t use roasted or cooked beets, just cut up raw beets with some vinegar or other sour element dressing them before they’re added to the salad… maybe that’s what’s going on here.
The colors really pop with this dish (not to beat a dead horse, I think that the white goat cheese cream would be better visually and taste-wize to be on top not underneath).
Overall, we liked this salad, the components are tasty on their own and really good all together. Again, it was a bit difficult to get everything all together.
