Lamington… Chocolate and Coconut covered Yellow Cake
Here’s what wikipedia says about lamingtons. And, here’s a nice post from David Lebovitz about lamingtons.
We thought that the cake looked very dry when we saw the interior, as a pleasant surprise, it wasn’t dry. It was a dense sponge cake with a large crumb (unlike a good pound cake which has a very fine crumb).
The chocolate coating was good and the coconut was a good quality (it was moist and flavorful).
We tried both of the Australian wines (Merlot and Riesling) with the lamington… the Merlot was better (probably because of the chocolate) than the Riesling.
On our scale of 1-10 (1=never ever again and 10=gotta have this 2 or 3 more times) – nora gave it a 7 and nick gave it a 5, average score 6/10. While this was quite good, we don’t often eat sweets and this is pretty much a calorie bomb for the size of the portion.
Here’s a recipe that nora found quite a while back. We haven’t tested it yet, so if you’d like to give it a try, please let us know how it comes out… Lamingtons
