Greek Salad – Epcot 2011 Food & Wine Festival

A Greek Salad is very easy to make.  If you use good quality kalamata olives and feta cheese you can create a very satisfying “mouth feel”. The Greece Kiosk did a nice job with this salad and are using good quality olives and feta.  The problem though – it was a tiny portion. On a hot Florida afternoon this salad is nice tasting and we enjoyed it so much we wish it was larger.

The bread however was very soggy.  It was added to the plate as the salad was served so not sure how/where it was being staged for use in this dish?  I trust that this will not happen regularly and we can recommend the Greek Salad.

UPDATE: I wrote this opening weekend and have been saving it to post.  On Saturday 10/22 Al, Judy and Big Sis were here. Judy got the salad and the portion was at least twice as big as the one we had a couple of weeks back.  It still had good olives and cheese with a balanced mix of all ingredients.  So some redemption but still it all depends on who is cooking and serving…more on that another day.
