(nora)<\/p>\n<p>First off, the wine discussion from the Lovely Miss Eva<\/p>\n<ul>\n<li>you should buy and drink what you like\n<ul>\n<li>wine doesn\u2019t have to be expensive &#8211; only enjoyable<\/li>\n<\/ul>\n<\/li>\n<li>wine should be simple and enjoyed with good company\n<ul>\n<li>at this point she remarked that the pours we had were going to allow us to actually taste the wine and enjoy it &#8211; unlike the pours at the beverage seminar she had just conducted<\/li>\n<\/ul>\n<\/li>\n<li>Lafite \u201cReserve Speciale\u201d Bordeaux Rouge\n<ul>\n<li>70% Merlot and 30% Cabernet<\/li>\n<li>Bordeaux is astringent, great marriage with food<\/li>\n<li>2009 Vintage\n<ul>\n<li>the best vintage since sometime in 1960\u2019s<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<li>you want your food and wine to complement each other\n<ul>\n<li>Nora: back to what I keep thinking about alcohol and food &#8212; you want good yin and yang<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>Now, to the <strong>food<\/strong> &#8211; this is a laundry list of notes that Nora took while listening to Jose Camey<\/p>\n<ul>\n<li>Paradiso 37\n<ul>\n<li>95% of the menu is made in-house<\/li>\n<\/ul>\n<\/li>\n<li>mole\n<ul>\n<li>moles don\u2019t have to be chocolate<\/li>\n<li>they are typically a thick sauce &#8211; may be smooth or may be chunkier<\/li>\n<li>basic ingredients in a mole are tomatoes, garlic, and onions<\/li>\n<li>can be stored in the refrigerator for up to four days &#8211; no longer<\/li>\n<li>if you vacuum pack moles, you can freeze them for longer storage\n<ul>\n<li>let thaw completely before reheating<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<li>chiles\n<ul>\n<li>to remove the heat from chiles\n<ul>\n<li>the longer you cook them, the more the heat dissipates<\/li>\n<li>if you cook with the chile flesh, not the seeds, you\u2019ll get more flavor than heat<\/li>\n<\/ul>\n<\/li>\n<li>chiles have different names depending on their ripeness, their preparations, etc\u2026\n<ul>\n<li>roasted and smoked POBLANO is called an ANCHO<\/li>\n<li>roasted and smoked JALAPENO is called a CHIPOTLE<\/li>\n<\/ul>\n<\/li>\n<li>the heat and flavor of chiles varies greatly depending on the time of year they\u2019re grown and the region they\u2019re from\n<ul>\n<li>never use a recipe containing chiles without tasting your chiles beforehand<\/li>\n<\/ul>\n<\/li>\n<li>always wear gloves, even dried chiles contain oils &#8211; and when they get on your skin or in your mucous membranes (eyes, nose) &#8211; you\u2019ll feel the heat<\/li>\n<li>cooking with dried chiles\n<ul>\n<li>remove the stems and seed and soak in hot water for an hour (?)<\/li>\n<li>rinse them off thoroughly before using<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<\/li>\n<li>flour tortillas vs corn tortillas\n<ul>\n<li>flour tortillas cook faster and heat up faster &#8211; thus fillings may not have enough time to get heated\/cooked before the tortilla<\/li>\n<li>corn tortillas allow the fillings to cook in the oven<\/li>\n<li>heat corn tortillas in a pot of oil, not frying them, to moisten and warm them so that they don\u2019t crack<\/li>\n<\/ul>\n<\/li>\n<li>cheese\n<ul>\n<li>a blend of cheeses adds silkiness and moisture to shredded meat<\/li>\n<li>shredded cheese mixed into your cooled shredded meat helps the meat to heat up more quickly and evenly inside your enchiladas (etc)<\/li>\n<\/ul>\n<\/li>\n<li>spices\n<ul>\n<li>add at the end when you\u2019re making sauces &#8211; keeps their flavors distinct<\/li>\n<li>toast spices before using them to release their oils<\/li>\n<\/ul>\n<\/li>\n<li>pico de gallo\n<ul>\n<li>simple!<\/li>\n<li>fresh, ripe plum tomatoes &#8211; don\u2019t refrigerate them!<\/li>\n<li>serrano chiles<\/li>\n<li>cilantro<\/li>\n<li>fresh lime juice<\/li>\n<li>salt &amp; pepper<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"ngg-singlepic ngg-none aligncenter\" src=\"http:\/\/www.extrawdwmagic.com\/wp-content\/gallery\/2010-food-amp-wine-festival\/jose-camey-oct-19-2010-3.jpg\" alt=\"jose-camey-oct-19-2010-3\" width=\"512\" height=\"502\" \/><\/p>\n<p><strong>What we ate\u2026<\/strong><\/p>\n<ul>\n<li>Beef Enchilada with Guajillo Sauce\n<ul>\n<li>red mole sauce, very smooth<\/li>\n<li>spicy &amp; earthy<\/li>\n<\/ul>\n<\/li>\n<li>Chicken Enchilada with Mole Verde\n<ul>\n<li>green mole sauce, more texture<\/li>\n<li>crisp-flavored, tart<\/li>\n<\/ul>\n<\/li>\n<li>Pico de Gallo<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"ngg-singlepic ngg-none aligncenter\" src=\"http:\/\/www.extrawdwmagic.com\/wp-content\/gallery\/2010-food-amp-wine-festival\/jose-camey-oct-19-2010-4.jpg\" alt=\"jose-camey-oct-19-2010-4\" width=\"512\" height=\"354\" \/><\/p>\n<p><strong>Final Thoughts&#8230;<\/strong><\/p>\n<ul>\n<li>portions were quite decent, we got half of a whole-sized beef enchilada and half of a whole-sized chicken enchilada<\/li>\n<li>the pico de gallo that was served with the enchiladas was topped with queso fresco and it was marvelous &#8211; I could eat a whole bowl of it like gazpacho!<\/li>\n<li>we prefer flour tortillas to corn tortillas, even if they aren\u2019t always \u201cthe way\u201d or \u201ctraditional\u201d<\/li>\n<li>are we brave enough to go to Paradiso 37? there\u2019s no way the food will be as good, is there?<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Food Who &amp;
